Potato Patties
Ingredients
- 2 cups Gwillimdale Farms White Potatoes; mashed potatoes
- 1 cup shredded cheese
- 1/2 cup breadcrumbs
- 2 large eggs
- 1/4 cup green onions, chopped
- salt and pepper to taste
Instructions
- First things first, preheat your oven to 400°F (200°C). This will ensure that your puffs get that lovely golden color we all rave about!
- In a large mixing bowl, combine your creamy mashed potatoes, shredded cheese, breadcrumbs, eggs, and chopped green onions. Add a generous pinch of salt and pepper to taste. I like to mix it all together with my hands, so you can really tell when it’s well combined!
- Once everything is mixed, it’s time to form the mixture into small balls. I usually aim for about 1 to 2 inches in diameter, but you can make them as big or small as you like! Just remember, the bigger they are, the longer they’ll take to bake.
- Now, place your adorable little puffs on a baking sheet lined with parchment paper. Make sure to give them a little space; they’ll puff up and need room to breathe! Pop them in the oven and bake for 20-25 minutes, or until they’re golden brown and calling your name. You’ll know they’re ready when your kitchen starts to smell heavenly!
