Carrot Cake Energy Balls

These Carrot Cake balls mimic one of our favourite desserts. A tasty treat, packed full of goodness, and easy to throw together. We see these as an all around family favourite, and we know you'll love them as a grab and go snack or dessert for packed lunches.

Carrot Cake Energy Balls

Ingredients
  

  • 1 cup rolled oats
  • 2 cups soft pitted dates
  • 3/4 cup finely grated carrot approx. 1 medium carrot
  • 1 tbsp honey or maple syrup
  • 1 cup unsweetened shredded coconut
  • 1 tsp cinnamon & nutmeg
  • 1/4 tsp sea salt
  • 1/4 cup chopped walnuts or pecans optional

Instructions
 

  • Add the oats to a food processor or high-speed blender and pulse a few times to break them down.
  • Add the rest of the ingredients and mix until it forms a thick, sticky dough. If it’s not sticking, add 1 tbsp of warm water and process again. Add more if needed.
  • Roll the mixture into approximately 20 energy balls.
  • Store in a sealed container in the fridge for up to 1 week or freezer for up to 3 months.
  • Optional: roll in additional coconut flakes, for visual effect.
  • These are also great dipped in Greek yogurt mixed with cream cheese and honey for a healthier “frosting” effect.

Notes

Ensure that you are using use soft, fresh dates. If they are dry, soak them in hot water for 10 minutes then drain well before using.
