Add the oats to a food processor or high-speed blender and pulse a few times to break them down.
Add the rest of the ingredients and mix until it forms a thick, sticky dough. If it’s not sticking, add 1 tbsp of warm water and process again. Add more if needed.
Roll the mixture into approximately 20 energy balls.
Store in a sealed container in the fridge for up to 1 week or freezer for up to 3 months.
Optional: roll in additional coconut flakes, for visual effect.
These are also great dipped in Greek yogurt mixed with cream cheese and honey for a healthier “frosting” effect.
Notes
Ensure that you are using use soft, fresh dates. If they are dry, soak them in hot water for 10 minutes then drain well before using.
