Carrot Cake Energy Balls
Ingredients
- 1 cup rolled oats
- 2 cups soft pitted dates
- 3/4 cup finely grated carrot approx. 1 medium carrot
- 1 tbsp honey or maple syrup
- 1 cup unsweetened shredded coconut
- 1 tsp cinnamon & nutmeg
- 1/4 tsp sea salt
- 1/4 cup chopped walnuts or pecans optional
Instructions
- Add the oats to a food processor or high-speed blender and pulse a few times to break them down.
- Add the rest of the ingredients and mix until it forms a thick, sticky dough. If it’s not sticking, add 1 tbsp of warm water and process again. Add more if needed.
- Roll the mixture into approximately 20 energy balls.
- Store in a sealed container in the fridge for up to 1 week or freezer for up to 3 months.
- Optional: roll in additional coconut flakes, for visual effect.
- These are also great dipped in Greek yogurt mixed with cream cheese and honey for a healthier “frosting” effect.
Notes
Ensure that you are using use soft, fresh dates. If they are dry, soak them in hot water for 10 minutes then drain well before using.
