Beet Salad
Beet Salad with Onions and Orange Vinaigrette. A perfect addition to add to your summer gatherings.
Ingredients
- 3 small, Gwillimdale Farms boiled beets, cut into wedges
- ¼ Gwillimdale Farms small red onion sliced thinly
- 1 orange, segmented
- 3 tbsp goat cheese
- ¼ cup roasted pistachios
- 1 bunch spring greens
Vinaigrette
- 1 tsp grated orange zest
- ¼ cup orange juice
- 2 tsp honey
- 2 tbsp red wine vinegar
- ¼ cup olive oil
- Salt and pepper to taste
Instructions
- Spread the spring greens onto the plate
- Layer the beets, orange, and red onions
- Crumble goat cheese on top
- Mix vinaigrette, shake together and dress on salad
- Sprinkle the pistachios on top
