Beet Salad
Beet Salad with Onions and Orange Vinaigrette. A perfect addition to add to your summer gatherings.
- 3 small, Gwillimdale Farms boiled beets, cut into wedges
- ¼ Gwillimdale Farms small red onion sliced thinly
- 1 orange, segmented
- 3 tbsp goat cheese
- ¼ cup roasted pistachios
- 1 bunch spring greens
Vinaigrette
- 1 tsp grated orange zest
- ¼ cup orange juice
- 2 tsp honey
- 2 tbsp red wine vinegar
- ¼ cup olive oil
- Salt and pepper to taste
Spread the spring greens onto the plate
Layer the beets, orange, and red onions
Crumble goat cheese on top
Mix vinaigrette, shake together and dress on salad
Sprinkle the pistachios on top
