Comfort food doesn’t get much better than this. The Potato Pie is cozy, hearty, and nourishing, it’s everything you want in a satisfying meal. With a crispy Gwillimdale Farms potato base that’s naturally gluten‑free, this dish is easy to customize and works for lunch, dinner, or meal prep. 

Potato Pie

Ingredients
  

  • 3 Gwillimdale Farms Yellow Potatoes, sliced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 cup tomatoes
  • 1 cup spinach
  • 1/2 cup cheese

Instructions
 

  • Peel and slice potatoes.
  • Boil sliced potatoes and then layer in pie pan and spread to evenly over dish.
  • Add spinach, tomatoes and cheese into the pie.
  • Bake at 400 F for 30 to 40 minutes.
  • Slice and enjoy.
