Beet Salad

Beet Salad with Onions and Orange Vinaigrette. A perfect addition to add to your summer gatherings.

Ingredients
  

  • 3 small, Gwillimdale Farms boiled beets, cut into wedges
  • ¼ Gwillimdale Farms small red onion sliced thinly
  • 1 orange, segmented
  • 3 tbsp goat cheese
  • ¼ cup roasted pistachios
  • 1 bunch spring greens

Vinaigrette

  • 1 tsp grated orange zest
  • ¼ cup orange juice
  • 2 tsp honey
  • 2 tbsp red wine vinegar
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions
 

  • Spread the spring greens onto the plate
  • Layer the beets, orange, and red onions
  • Crumble goat cheese on top
  • Mix vinaigrette, shake together and dress on salad
  • Sprinkle the pistachios on top
