Beet and Potato Salad
This sweet and salty beet and potato salad will surely satisfy your foodie cravings.
Ingredients
- 4 cups quinoa
- 2 Gwillimdale Farms white potatoes, scrubbed
- 2 Gwillimdale Farms small beets, scrubbed, skin removed
- 1 tbsp olive oil
- 1 tsp salt
- 2 cups kale shredded
- 1 Gwillimdale Farms red onion, chopped
- 1 cup feta cheese
- 2 garlic gloves
- ½ cup olive oil
- 1 cup balsamic
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat your oven to 425
- Cut your potatoes and beets into ½ inch cubes
- Add your vegetables, onion and garlic to baking sheet with olive oil, salt and pepper
- Bake for 25 minutes
- While vegetables are roasting cook your Quinoa.
- Mix together and enjoy
