Welcoming Our 2026 Partner: Nicole Osinga, RD 

At Gwillimdale Farms, our story has always been rooted in nourishing communities with fresh, wholesome food. Over the years, we’ve learned that the journey toward healthier eating begins long before someone steps into a grocery store or kitchen. It starts with guidance, support, and credible nutrition information families can trust. 

That’s why we’re thrilled to introduce our 2026 partner: Nicole Osinga, Registered Dietitian, Certified Diabetes Educator, Craving Change Counsellor, and respected nutrition educator. Nicole brings a rare blend of advanced academic training, clinical experience, and real-world communication skills that make healthy eating feel achievable for everyone. This month she’s showcasing Lego Meal Prep featuring our root vegetables.

Why Nicole? 

Nicole’s professional journey began with a deep desire to understand how to properly nourish the human body and support healthier eating behaviors. With a Bachelor of Human Nutrition and a Master of Applied Nutrition, she has a strong scientific foundation in how food impacts health. Her additional certifications as a Certified Diabetes Educator and Craving Change Counselor further strengthen her ability to help individuals build sustainable, positive relationships with food. 

Her clinical background spans inpatient hospital care, outpatient cancer care, and long term care, giving her a well-rounded understanding of the diverse health challenges individuals and families face. 

Beyond her clinical expertise, Nicole is passionate about sharing practical, evidence based nutrition information with the public. You may recognize her from her vegetarian meal prep content on Instagram, her national television appearances, or her articles in the Toronto Star. Her approachable style and commitment to empowering people to build healthier habits make her an ideal partner for our mission.

Nicole’s Thoughts on Partnering With Us

From crisp carrots and hearty potatoes to sweet beets and flavourful onions, their crops are cultivated with care and quality on their family run fresh produce farm in Bradford, Ontario.” 

Nicole also emphasizes that root vegetables, often misunderstood by those focused on weight loss, digestion, or blood sugar control, are actually powerful nutritional allies. She explains that potatoes, beets, carrots, and parsnips contain resistant starch, a type of starch that isn’t digested in the small intestine and instead ferments in the colon, acting like fibre. This process feeds beneficial gut bacteria, supports the gut lining and microbiome, reduces blood sugar spikes, and even lowers the usable calories in the food.
