Shred two Gwillimdale Farms carrots and 1 cup of mozzarella cheese.
In a medium mixing bow add shredded carrots, mozzarella cheese, 1 egg, salt and mix all together.
Make the mix into balls and with a spoon press them into circles that mimic small tortillas. Make sure to line the baking sheet with parchment paper.
Bake at 350F for 25 minutes and enjoy.
