Beet and Potato Salad
This sweet and salty beet and potato salad will surely satisfy your foodie cravings.
- 4 cups quinoa
- 2 Gwillimdale Farms white potatoes, scrubbed
- 2 Gwillimdale Farms small beets, scrubbed, skin removed
- 1 tbsp olive oil
- 1 tsp salt
- 2 cups kale shredded
- 1 Gwillimdale Farms red onion, chopped
- 1 cup feta cheese
- 2 garlic gloves
- ½ cup olive oil
- 1 cup balsamic
- ¼ tsp salt
- ¼ tsp pepper
Preheat your oven to 425
Cut your potatoes and beets into ½ inch cubes
Add your vegetables, onion and garlic to baking sheet with olive oil, salt and pepper
Bake for 25 minutes
While vegetables are roasting cook your Quinoa.
Mix together and enjoy
