Beet and Potato Salad

This sweet and salty beet and potato salad will surely satisfy your foodie cravings.

Ingredients
  

  • 4 cups quinoa
  • 2 Gwillimdale Farms white potatoes, scrubbed
  • 2 Gwillimdale Farms small beets, scrubbed, skin removed
  • 1 tbsp olive oil
  • 1 tsp salt
  • 2 cups kale shredded
  • 1 Gwillimdale Farms red onion, chopped
  • 1 cup feta cheese
  • 2 garlic gloves
  • ½ cup olive oil
  • 1 cup balsamic
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions
 

  • Preheat your oven to 425
  • Cut your potatoes and beets into ½ inch cubes
  • Add your vegetables, onion and garlic to baking sheet with olive oil, salt and pepper
  • Bake for 25 minutes
  • While vegetables are roasting cook your Quinoa.
  • Mix together and enjoy
