Carrot Tacos

Add a burst of colour and crunch to your plate with our Carrot Slaw Tacos! Packed with fresh, farm-grown carrots, crisp veggies, and zesty dressing, these tacos are a refreshing twist on taco night. Light, bright, and full of flavour — they're the perfect way to eat the rainbow!

Ingredients
  

Slaw:

  • 3 cups Green Cabbage shredded
  • 1 cup Red Cabbage shredded
  • 1 cup Gwillimdale Carrots shredded
  • 1 Gwillimdale Yellow Onion chopped
  • 1/2 cup Cilantro chopped

Dressing:

  • 1/2 cup Mayo
  • 1 tbsp Lime Juice
  • t tbsp Lemon Juice
  • 1 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • 1 Garlic Clove
  • 1 Zest of Lime

Instructions
 

  • In a large mixing bowl, whisk together the mayo, lime juice, minced garlic, salt, and pepper.
  • Shred the cabbage with a chef's knife or the shredding disc of a food processor.
  • Shred the carrot on the large holes of a box grater or with the shredding disc of a food processor.
  • Add shredded cabbage and carrot and the chopped cilantro and scallions to the mixing bowl.
  • Toss slaw to coat it all with dressing.
  • Before serving, let it rest at room temperature for at least 10 minutes or in the fridge for at least an hour to allow the flavors to combine. Choose your favourite taco shells or wraps to pair with.
