Quick Pickled Red Onions

Ingredients
  

  • 1 medium red onion thinly sliced
  • ½ cup apple cider vinegar
  • ½ teaspoon kosher salt
  • ½ teaspoon sugar
  • 4 peppercorns

Instructions
 

  • Pour the vinegar into a medium-large mason jar and stir in the salt and sugar until dissolved. Add the peppercorns, and then the sliced onions, pushing the onions down into the jar so that they are fully immersed in the liquid.
  • Seal the jar and throw it into the fridge for at least an hour before serving. The onions will keep, refrigerated, for about 2 weeks.
